Settling in New York City, he became a regular at the city's finest starred restaurants. Each dinner was an experience he wanted to hold onto, the weight of a particular knife, the geometry of a handmade ceramic, the fragrance of a sauce he could never quite replicate at home.
He realised he was not alone. Every great restaurant has guests who ask "where can I buy this?", and too often, the answer is nowhere. The souvenir of a remarkable meal existed only in memory.
